Spicy Spice Cake

This cake is moist and delicious. 

Recipe follows

1 C whole wheat flour
1 C unbleached white flour
1 1/2 tsp non-aluminum baking powder
1/2 tsp baking soda
3 Tbs ground flax meal (adds omega 3's and extra moisture)
2 tsp cinnamon
1/2 tsp nutmeg
1 tsp cloves
1 tsp ground ginger
3/4 tsp allspice
MIX ALL DRY INGREDIENTS TOGETHER
cream 1/4 C butter softened + 1/4 C coconut oil
3/4 C natural sugar
1/4 C dark brown sugar (packed)
add 2 eggs + 1 1/4 C buttermilk *
*You can make a sour
milk by adding 1 Tbs lemon juice or
vinegar to sweet milk, or soy
almond or rice milk, let sit 5 minutes,
I have also used plain yogurt mixed
with water.
 MIX WET INGREDIENTS INTO
THE DRY INGREDIENTS
AND BEAT FOR A FEW MINUTES
POUR INTO 2  8" round cake pans that
have been greased and floured
 Bake for 25 minutes on 350°
Until toothpick comes out clean.
Frosting,
1/2 package cream cheese
1/2 stick butter
soften both, whip together add
approx 2 C powdered sugar,
 3 TBS half & half
OR for a tangy frosting use a squeeze
of fresh lemon juice.
I added a tiny drop of red food
coloring and sprinkles to make it fun.
If you like carrot cake you can add
shredded carrots to this and raisins and nuts,
whatever you like.
